Taqueria LA CabaÑa

In one of my favorite Willamette Valley small towns, Cottage Grove, OR I stumbled upon a "hole in the wall" green and yellow taco bus. After eating one of the best pollo tacos of my life. I knew some people wouldn't be able to see past the shabby exterior and I knew I had to do what I could to help modernize  and augment first impressions. 

The next day I came back for more tacos, but this time brought a mock menu. She was graciously surprised and ecstatic to graduate from handwritten posters to a proper menu.
